Snowdonia Rock Star
Rock Star, our debut vintage cave-aged Cheddar, completes its 18-month maturation inside Welsh slate caverns surrounded by the mountains of Snowdonia. With a hint of sweetness and a long savoury tang, Rock Star’s complex flavours are as deep as the historical caverns it’s aged in. Smooth and creamy, with the occasional crystal crunch. Sealed in a slate-blue wax. And the undisputed star of your cheeseboard.
Cotswold Brie
Cotswold Brie is a delicious white, soft moulded cheese, produced from our organic milk. It has a rich creamy, clean and fresh taste, and while it continues to develop flavour over its life, it doesn’t become a pungent cheese. Our Organic Cotswold Brie is ideal for eating as a light lunch, perhaps with just a beautiful crisp English apple; it is equally at home on a dinner party cheese board.
Dorset Red
Made on the farm with local milk, Dorset Red is a delicately oak smoked hard cheese with a rich creamy texture and distinctive amber colour. The deep amber colour, due to the addition of annatto, a commonly used natural colouring which gives it a similar appearance to a Red Leicester. The cheese is traditionally made and matured then cold-smoked over oak chips, overnight, which gives a distinctive, mellow, smoky flavour.
Snowdonia Red Storm
Intense, nutty and deliciously rich. Complex, refined and beautifully balanced with sweet caramel notes. Red Storm, expertly aged for 18 months, is elegantly adorned in a deep red wax that echoes the twilight skies above the peaks of Snowdonia. Relish this multi-award-winning vintage Red Leicester in a simple sandwich. Sprinkle it generously in recipes. Adorn your after-dinner cheeseboard with a russet-red wedge as the perfect finishing touch.
Baron Bigod
Baron Bigod is a stunning brie-style cheese, with a rich, full, earthy flavour and a lingering finish. It's made by Jonny Crickmore from the milk of his own herd of Montbeliarde cows in Suffolk. Jonny likes the cheese best when its wrinkly coat has broken down the golden, buttery paste under the rind, while a thin line of lactic curd at the centre remains.
